  • "Nixtamalization and Preparation of Corn Tortilla Chips":
           a) Fresh masa; b) Dry masa
  • "Corn Quality Evaluation Procedures and Equipment":
           a) Corn grades and standards; b) Corn testing; c) Hardness; d) GMO Analysis
  • "Evaluation of Snack Food Ingredients":
           a) Factors affecting corn meal quality and variation; b) Dry masa quality; c) Other snack food
                ingredients: rice, sorghum, etc.
